Delicious Mashed Potato Pancakes
Today I use a recipe, my grandmother used neither and instead relied on her institution and decades of frying experience to make what I remember as the perfect potato pancakes. Today I build on her expertise and some useful techniques when making potato pancakes. I used sweet potatoes to make pancakes more colorful. This awesome recipe you also called Latke recipe. This is an awesome way to have vegetables for breakfast.

Which ingredients should I need for Latke or Potato Pancakes:
Ingredients:
3 large potatoes
2 or 3 cup other vegetables, I used carrot, beans grated
4 eggs
2 tablespoon flour
1 medium onion
1 tablespoon salt
oil for frying
Ground black pepper to taste
Instructions:
I washed, peeled, and grated the raw potatoes. I grated and finely chopped the onion and added it to potatoes and along with other any veggies I used.
I beat the eggs well and added them to the bowl. I added salt and flour and mixed well.
I heat 1/4 inch oil in the bottom of a heavy skillet over medium-high heat. I dropped two or three 1/4 cups mounds into hot oil, and flatten them to make 1/2 inch thick pancakes. I fried, turning once and until golden brown.

I transferred to paper towel-lined plates to drain, I kept warm in a low oven until serving time. I repeated with the remaining batter.
This delicious Latke or Potato Pancakes is ready to eat and I garnished with some freshly chopped cilantro and ground black pepper.
