Healthy & Appetizing Cucumber Mango Salad

For all salad, lovers get ready to fill your forks with crispy greens and homemade dressings with bright and flavorful salads. Cucumber and mango is a classic combination healthful proportion.

This recipe happens to be simple and giving the chance to eat vitamins and minerals, nourish my skin and make me smile. If you prefer light salad, this recipe is best for you. Mango chunks provide 100% of vitamin-c, potassium, Vit-B6, and Vit-A. This salad is good for eyes, bones, and healthy glowing skin.




For this salad, I will use English cucumber because they have little, no seeds and seem to have more freshness in my local supermarket. I also use fresh ripe mangoes, it's sweet, sour, and the freshness of cucumber for a light and refreshing dish.

What ingredients should I use for the healthy recipe:

Ingredients:

1mango diced

1 cucumber diced

1/2 red onion

1/4 cup fresh cilantro, chopped

1/4 cup olive oil

1 lime juice

1/4 cup rice vinegar

Sea salt & freshly ground black pepper

Method:

I washed the cucumber well and peeled and sliced the cucumber into half rounds. I cut the mango into slices and scored the flesh of the mango into strips using a sharp paring knife. I used a spoon to scoop the flesh from the skin.

I cut the mango slices in half so that they are more similar to the cucumber slices.

Next, I prepared the dressing by combining the rice vinegar, sugar, salt, freshly ground black pepper in a small bowl. I stirred until the sugar is completely dissolved.

After that, I added the sliced cucumber and mango to a large bowl then poured the dressing over the top. I stirred to combine the ingredients and coated the cucumber and mango in the dressing.

I served immediately if you like to eat chilled then you refrigerate until ready to eat. I garnished with some freshly chopped cilantro, this aromatic flavor gives some extra colorful texture. I added some lime juice before serving this to add an extra tangy and sour mouthwatering taste.
