Fluffy & Tasty Corn Pancakes

Fluffy, tasty, healthy, and easy-to-make Corn Pancakes are a healthy and tasty twist on classic pancakes.No buttermilk, don't need to whip egg whites. This corn pancake is crispy outside, soft inside, and full of corn will turn my breakfast super healthy. These corn pancakes have crispy edges and a soft center is only improved by a healthy drizzle with honey.

Fluffy Corn Pancakes

There are different cornmeal on the market. I prefer finely ground cornmeal in my pancakes. These pancakes are not totally cornmeal -they are 50% flour and 50% corn. This combination keeps corn pancakes soft and fluffy.

How I make fluffy and tasty Corn Pancakes:

Ingredients:

1cup finely ground cornmeal

1 cup all-purpose flour

2 tablespoon granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1/4 cup vegetable oil

Butter

Method:

I whisked cornmeal, flour, granulated sugar, baking powder, and salt together in a medium mixing bowl. I added the eggs, milk, and vegetable oil. Whisk until smooth.

Lightly oil a nonstick griddle. I heated the griddle over medium-high heat.

I poured the batter onto the griddle. Batter should sizzle when it hits the pan. I cooked for approximately 3 minutes. I flipped the pancakes when bubbles appear all over the surface of the pancakes. The pancake should begin to look almost dry. I flipped and cooked another 1 to 2 minutes.

I served fluffy and tasty Corn Pancakes with butter. I drench my pancakes in maple syrup so I prefer the pancakes to have a little or less sugar, for contrast.
