Perfect Spanish Potato Tortilla
A beautiful authentic Spanish dish is known as Spanish Potato Tortilla or Tortilla de Patatas, is perfect for breakfast, lunch, dinner, and even for snack time. I will love a simple, filling meal served with a salad and crunchy loaves of bread. In breakfast times when I couldn't look at another bowl of cereals with my family barbeque or friend's party and saves me from eating plain eggs or omelets.

Spanish Potato Tortilla has another advantage, it is better at room temperature than it is hot and this recipe should be made in advance, anywhere I can make it within 15 minutes to 30 minutes.
Perfect Spanish Potato Tortilla |
Ingredients:
3 or 4 medium potatoes
1 medium onion
1 cup olive oil
salt and freshly ground black pepper
6 large eggs
Method:
I peeled and thinly sliced potatoes and onions and heated oil in an 8 or 10 inches skillet over medium heat. I added potatoes, onions, a good pinch of salt, and a sprinkling of pepper. I gently turned the mixture in oil in a wooden spoon, and adjust the heat so oil bubbles lazily.
I cooked turning potatoes gently in few minutes. Then I beat the eggs with some salt and pepper in the large bowl. I added 2 tablespoons of oil to the skillet and mixed warm potatoes with eggs. I reduced heat to medium-low and cooked for 5 minutes.
I inserted a rubber spatula all around the edges of the tortilla to make sure it will slide from the pan. I covered up with another plate and holding plates tightly. I added another tablespoon of oil to the skillet and I used spatulla to coax the tortilla back in. I cooked for 5 minutes and slide from the skillet onto a clean plate.
After that, I served Spanish Potato Tortilla at room temperature.
The comforting flavor of the classic Spanish dish is served at any time of the day, either warm or cold. I think it's a perfect centerpiece and just adds a side of seasonal fruits.
