Lucious Cucumber Idli
Cucumber Idli is a famous South Indian breakfast recipe. Cucumber Idli is different from my daily boring breakfast, Cucumber Idli can also be served for my lunch box with chutney and sambhar. This recipe is one of my most beloved breakfast dishes. Idli is not only delicious but also healthy and light on the stomach.

Cucumber Idli is a simple breakfast recipe that is very popular in Karnataka and Konkani regions. The best part of the idli is recipe is that it does not require fermentation, soaking, or such a long process.
I can taste delicious and refreshing cucumber idli just by adding a little cucumber. Cucumbers have a chilled taste and flavor, so I can combine Cucumber Idli with chutney to balance and make a delightful healthy breakfast.
How to make Cucumber Idli :
Ingredients:
2 large cucumber
1 cup grated coconut
2 cup rice semolina
1/4 cup powdered Jaggery
4 finely chopped green chilies
1/2 tsp grated fresh ginger
1 tsp freshly chopped coriander leaves
Method:
I washed and peeled and grated the cucumber.
I added green chilies pieces, jaggery, and salt. I mixed nicely to break jaggery pieces.
Now I added idli Rava or Rice Rava.
I mixed everything and keep aside for 30 minutes. This will allow idli Rava to absorb all the juices from grated cucumber.
After 30 minutes I added freshly grated coconut and mixed it.
Then I use idli molds to prepare idli as I do normally.
Or you can use turmeric leaves, put a fistful of the mixture in the center and fold the leaves very tightly as shown.
I arranged the steamer basket steam for 20 minutes.
Then the delicious Cucumber Idli served with coriander chutney.
The cucumber idli has the right seasoning but tastes awesome with some ghee.
