The weight loss vegetable soup is one of my favorites. Vegetable soup is healthy, delicious, and filling. Vegetable soup is easy to make and perfect for dinner and lunchtime. Vegetable soup is bright, colorful, and loaded with all kinds of vegetables. I enjoy a small bowl of this vegetable soup before each meal.

So, today I will make an easy recipe with a beautiful bunch of carrots, ginger, and this soup is not the magic weight loss secret but also I am trying to cut the calories and make my body energize.

This soup is healthy, easy to make, has a creamy smooth texture, and warms me from the inside out. I can definitely say that ginger is one of my favorite ingredients to spice up any dish. The Carrot Ginger soup has the perfect balance of sweetness and savoriness.

Carrot Ginger soup ingredients:

This healthy recipe needs just simple seven ingredients and most of those I will likely have in my fridge or pantry.

Here I will need:

2 pounds carrots peeled and sliced.

2 onions and garlic add freshness and depth of flavor.

2 tablespoon grated fresh ginger

1 Bay leaf add the sweet taste

Salt and pepper as per taste

Cinnamon adds amazing flavor

Vegetable broth

Parsley or cilantro for garnishing

How I make Carrot Ginger soup:

I cooked onions, ginger, and garlic in a large pot over medium heat with olive oil for a few minutes.

I added carrots into the pot and cooked for 10 minutes.

After that, I added vegetable broth, bay leaf, cinnamon, and salt to the pot. It started boiling and cover it, and turned the heat down to low, and shimmered for 20 to 30 minutes.

Then I transferred all the ingredients into the high-speed blender and blended for about 1 minute until it's pureed or creamy paste.

Carrot Ginger smooth paste


Then I cooked the smooth carrot paste in a pot over medium heat with olive oil or you can use butter also about 1 to 2 minutes and stirred frequently. I remove the crispy shallots onto a paper towel.

 The tasty Carrot Ginger soup is just ready, and I garnished it with coconut cream, shallots, parsley or you may choose cilantro to add some aromatic flavor and enjoy with my family and friends.
