Bright Broccoli Pasta Salad

 This bright broccoli pasta salad recipe is colorful and healthy and packed with lots of veggies and unlike a lot of pasta salad, I may need a packable potluck salad. Fresh broccoli is one of my favorite crunchy vegetables, I decided to build a pasta salad featuring broccoli and my new favorite homemade pasta dressing.

The broccoli pasta salad has a high ratio of veggies to pasta, blanched broccoli, and crunchy green beans add lots of texture. The broccoli in this salad is raw, raw broccoli is deliciously crunchy but does have a different flavor from cooked broccoli. You can use also roasted broccoli to give an extra flavor boost to the salad. 

 

BRIGHT BROCCOLI PASTA SALAD

  

Ingredients:

4 cups broccoli cut into small pieces 

Rotini pasta

1/3 cup red onion diced

1/2 cup dried cranberries

1/4 cup sunflower seeds

1/2 cup feta cheese

For Dressing:

2 tablespoon sugar

3 tablespoon white wine vinegar

3/4 cup mayonnaise

1/4 cup sour cream

Salt and pepper

How I prepare a broccoli pasta salad:

I whisked white wine vinegar, sugar, salt, and pepper in a bowl until smooth. I began to whisk in the olive oil, one tablespoon at a time until fully incorporated.

I cook the rotini pasta and drained the pasta in a colander. I rinsed briefly with cool water to cool off the pasta.

I added the remaining ingredients to a large bowl.

Once the pasta has drained and transferred to a large bowl. I added the chopped broccoli, red onion, and sunflower seeds. I crumbled the feta cheese over top.

I drizzled the dressing into the bowl and gently toss the ingredients until they are evenly combined and everything is coated in the dressing. Before serving this awful dish refrigerate until ready to eat.

This Broccoli pasta salad is one of my favorites because it combines pasta and vegetables. Adding a creamy dressing with feta and I gave myself one heck of aside. Believe me, when I taste this Broccoli pasta salad recipe I will not go back to any other side.
